Some herbs can be picked throughout the growing season, while evergreens or
deciduous perennials are available all year round. The leafy herbs are best
picked just before the plant flowers, and in the morning when the dew has
dried but before the oils have begun to evaporate in the hot sun.
Snip sprigs from the very ends of the stems to allow growth to continue,
and try not to over pick and weaken the plant. Choose healthy sprigs and
discard any yellowing leaves. If you are gathering herbs from the wild,
make sure you have made a positive identification: mistaking foxglove
leaves for comfrey can have fatal results.
Use fresh herbs within a week: they keep well in sealed plastic bags in the
refrigerator. If you intend to dry the herbs for winter use, start the
process as soon as possible as the scent, flavor and health giving
properties begin to diminish as soon as they are separated from the parent
plant.
